More normally, a story from cruise ships but this one is a train.

Great Southern Rail have responded by cleaning carriages more frequently

Are we scrupulously clean in the UK so don't have the problem, or are journeys so short that anyone who picks anything up is long time off the train before they realise?

Firstly, most UK train journeys are too short for symptoms to become apparent whilst still on board.
And of course a lot of UK trains don't serve freshly prepared food. Sealed packets of nuts, crisps, biscuits, confectionery and the like are very low risk.

Mind you, there are those among us, who spend so much time in the few buffets that are left, that they probably have cast iron immunity from any buffet bug going!😀
