I check the GWR (Great Western Railway) booking horizons page daily.
https://www.gwr.com/your-tickets/choosing-your-ticket/advance-tickets

Is there any logic as to when the dates change?

Confirmation of the timetable (driven by planned engineering works as well as permanent changes) is a major consideration.  No point selling a ticket for a specific train until you know when that train is running! Network Rail take the lead on finalising all that, and generally have to work to the deadlines mentioned on the GWR (Great Western Railway) website.

To be honest most people travel longer distance before Christmas Eve - is this because a perception of services finishing earlier perhaps ?

Or perhaps the favoured day (Saturday ) for industrial action, should the dispute remain unresolved.
