Naive question.   Is it still 2 car?  Could in be 3?  4? Could a 5 car IET (Intercity Express Train - replacement for HSTs (manufactured by Hitachi in Kobe, Japan)) go down the docks?

GWR (Great Western Railway) sent an HST (High Speed Train (Inter City class 43 125 units)) to Falmouth to celebrate the 150th Anniversary of the branch, so, probably, yes ?

but it would take longer to load / unload at the docks as only the front half would platformed and so a lot of passenegers would have to walk through the train...

I really don't accept that argument, there's sufficient time to get passengers briefed to cooperate quickly on Arrival./ Departure. The worst thing that caught me last year is the insane in my view shoving pax (passengers) incoming from services from the west and the east at Truro into the main queue. Surely if you're in the network you shiuld get preferential treatment over those entering for the first time. Operating two queues has to be the fairest system.
