As I think I have said before, I recommend Britain's Railways in Wartime https://historicengland.org.uk/images-books/publications/britains-railways-in-wartime. Fascinating information about the massive increase in traffic in traffic and how they coped. Also has some stuff on catering.

Historic England books are generally excellent, although pricey probably because of short print runs.
