...and unwisely building up expectations given that they know they are struggling to provide anything like a decent basic service.  A refund after the event will be little consolation.

They currently say on their website "From 3 to 24 December, we’ll be serving our festive menu in First Class".  Granted there's a tiny footnote that "*all items on our menus are subject to availability" but no real warning that it might all go belly up for anyone who doesn't keep a close eye on what's going on in the rail industry and might even have heard about problems getting to Manchester but wouldn't associate that with travelling to north Wales.  Abandoning pre-travel First Class ticket sales and going for on-train upgrades only until things improve might have been better PR (Public Relations)-wise to avoid articles like this, given how ridiculously expensive full rate First Class fares will seem even if most people will be able to find cheaper fares or would decide not to go First Class.
